Troubleshoot on Fruit Pulps & Syrups


WHAT IS FRUIT PULP?

It is the soft, drinkable, or thick mass of fruit left after skins and seeds are removed. 

WHAT IS FRUIT SYRUP?
It is a thick, sweet liquid made by mixing fruit juice or pulp with sugar and water. 

WHAT IS THE DIFFERENCE BETWEEN PULP AND CONCENTRATE?
Pulp is crushed fruit with all of its natural water. Concentrate is pulp that has been heated to remove water, making it thicker and smaller to ship. 

HOW IS PULP MADE?
Fruits are sorted, washed, peeled, crushed, and heated to kill germs.

HOW ARE FRUIT SYRUPS MADE?
Sugar and water are boiled into a syrup. Fruit pulp is added to the hot syrup to add flavor and color. 

WHAT IS THE SHELF LIFE OF FRUIT PULP?
Stored frozen at -20 °C, pulp lasts for one year. Aseptic packaging allows it to last at room temperature for months. 

HOW DO YOU PREVENT FRUIT PULP FROM GOING BROWN (OXIDATION)?
Air turns pulp brown. Remove the air from the pulp using a vacuum machine and add Vitamin C (ascorbic acid). 

WHY DOES THE PULP TASTE BITTER?
Crushing seeds or fruit pits releases bitter oils. Remove all seeds and stones before crushing the fruit. 

WHY DOES MY YOGHURT WITH FRUIT PULP SEPARATE (WHEY OFF)?
Water separates from the yogurt because the pulp is too thick or has the wrong acid level. Match the pulp's 
thickness and acidity closely to the yogurt using stabilizers. 

HOW DO I STOP SUGAR CRYSTALS FROM FORMING IN HEAVY SYRUP?
Too much sugar in the syrup makes it crystallize. Boil the sugar with citric acid to break it down, and 
add a little glucose so it stays liquid. 

WHY DO HARMFUL GERMS GROW IN MY SYRUP OR PULP?
Germs grow if the product is not hot enough or if the containers are dirty. Use processing guidelines to pasteurize fruit products between 90 °C and 100 °C before sealing them. 

HOW DO YOU CLEAN MACHINES AFTER RUNNING STICKY FRUIT SYRUPS?
Sticky syrup causes machines to clog and attract bugs. Run hot water and food-safe cleaning 
chemicals (Clean-In-Place systems) through the pipes immediately after use. 

DOES HEATING FRUIT PULP DESTROY ITS NUTRIENTS?
High heat destroys vitamins. Use flash pasteurization—heat the pulp very fast, then 
cool it down instantly to save nutrients. 

WHAT IS THE IDEAL SUGAR LEVEL (BRIX) FOR FRUIT SYRUP?
Light syrups have about 200g of sugar per liter, while heavy syrups have 800g per liter. 

WHAT IS THE CORRECT pH FOR FRUIT PULP?
The pH (acid level) should be between 3.7 and 3.9 to stop bacteria from growing.

WHY DO I GET FOAM DURING THE BOTTLE FILLING PROCESS?
Foam ruins bottle seals and spills liquid. Fill bottles from the bottom up and gently remove air from the juice before filling. 

HOW DO I REMOVE PESTICIDE RESIDUE FROM FRESH FRUIT?
Pesticides on fruit skins get into the pulp. Soak the fruit in a very weak acid wash (diluted hydrochloric acid) and wash with clean water. 

WHY DOES MY CANNED FRUIT IIN SYRUP LOSE ITS BRIGHT COLOUR?
Heat cooks the fruit too much in the can. Cool the cans with cold water immediately after cooking them. 

HOW DO YOU STOP SEDIMENT FROM SETTLING AT THE BOTTOM OF A FRUIT DRINK?
Small fruit pieces sink to the bottom. Grind the pulp into smaller particles using a machine called a homogenizer. 

WHAT EQUIPMENT TOUCHES THE FRUIT?
All machines that touch fruit must be made of food-grade stainless steel so they do not rust. 


WHY DOES FRUIT PULP TURN BROWN DURING EXTRACTION?

Enzymatic oxidation via polyphenol oxidase (PPO) triggered by cell damage and air exposure. Apply rapid thermal 

blanching, deaeration under vacuum, or add ascorbic acid (Vitamin C).


HOW DO YOU PREVENT MICROBIAL SPOILAGE IN HIGH-WATER-ACTIVITY PULPS?

High vulnerability to yeasts, molds, and bacteria post-extraction. Implement continuous high-temperature 

short-time (HTST) pasteurization and aseptic hot-filling.


WHAT CAUSES SUGAR CRYSTALLIZATION IN CONCENTRATED FRUIT SYRUPS?

High supersaturation ratios or improper invert sugar ratios during boiling. Introduce an acidulant (like citric acid) or 

invertase enzyme to partially hydrolyze sucrose into glucose and fructose. 


HOW CAN VISCOSITY AND TEXTURE CONSISTENCY BE MAINTAINED ACROSS BATCHES?

Natural variations in fruit ripeness and pectin levels. Standardize final total soluble solids (°Brix) and use 

controlled homogenization paired with pulper-finishers.


WHY DOES PHASE SEPARATION (SYNERESIS) HAPPEN IN BEVERAGES CONTAINING PULP?

Ionic attraction causing pulp self-flocculation and loss of colloidal suspension. Stabilize the matrix using 

hydrocolloids like propylene glycol alginate (PGA) or pectin complexes.


HOW DO YOU ELIMINATE BITTERNESS CAUSED BY SEED/STONE CRUSHING?

Crushed kernels release tannins and naringin into the pulp stream. Calibrate mechanical destoning equipment 

to prevent physical core fracturing.


WHAT IS THE BEST WAY TO EXTEND THE SHELF LIFE OF SEASONAL FRUIT PULPS?

Off-season raw material deficits. Freeze aseptic-packed pulp rapidly down to -20 °C for up to 12 months of storage stability.


HOW DO YOU MANAGE UNDESIRABLE pH SHIFTS DURING JUICE AND SYRUP BLENDING?

Inconsistent organic acid levels affecting taste and preservative efficiency. Monitor titratable acidity continuously and 

use food-grade buffer salts or acidulants.


HOW CAN PESTICIDE RESIDUE AND SURFACE PATHOGENS BE MINIMIZED EFFECTIVELY?

Inadequate raw fruit sanitation. Utilize multi-stage washing with chlorinated water (10–100 ppm) 

followed by a potable water rinse.


WHAT CAUSES OFF-FLAVOURS DURING ARTIFICIAL OR ACCELERATED FRUIT RIPENING?

Ethylene or carbon dioxide toxicity buildup in closed ripening rooms.

Install calibrated forced-air ventilation and carbon dioxide scrubbers in maturation chambers


HOW DO YOU DETECT MICROSCOPIC PHYSICAL CONTAMINANTS IN DENSE PULPS?

Standard optical sorters fail to see embedded plastic, glass, or stone fragments. Integrate inline industrial X-ray 

inspection systems post-pulping.


HOW TO PREVENT FOAMING AND OXIDATION DURING HIGH-SPEED BLENDING?

Entrapped air degrading color and vitamin profile. Apply inline vacuum deaeration chambers and 

blanket tanks with inert nitrogen gas


WHAT CAUSES RAPID MECHANICAL WEAR ON PULPER-FINISHER SCREENS?

High fiber friction and abrasive grit in under-washed incoming fruit. Enhance pre-washing and select 

hardened stainless-steel mesh configurations. 


HOW TO ENSURE REGULATORY COMPLIANCE FOR CLEAN-LABEL MARKETING?

Consumer rejection of artificial chemical preservatives. Optimize thermal processing parameters to
