WHAT IS THE DIFFERENCE BETWEEN A CULTURE AND A SPORE?

A culture is a living group of helpful microbes used to make food. A spore is a hard, sleeping shell 
that bacteria form to stay alive in bad conditions. 

WHAT ARE CULTURES USED FOR IN FOOD?
Cultures make foods like yogurt, cheese, and salami. They turn sugars into acids, which changes the 
food's taste, texture, and keeps it safe from bad bacteria. 

WHAT ARE STARTER CULTURES?
These are specific good bacteria or yeasts added to food on purpose to start a fermentation process, 
like yeast used to make bread or beer. 

WHAT ARE SPORE-FORMING BACTERIA?
These are bacteria (like Bacillus and Clostridium) that can turn into hard spores when 
they are in danger from heat or chemicals. 

WHY ARE SPORES DANGEROUS IN FOOD?
Spores are very hard to kill. If food is not kept cold enough, the spores wake up and 
can make toxins that cause severe food poisoning.

DO SPORES SURVIVE COOKING AND PASTEURIZATION?
Yes. Many spores can survive normal cooking and heating. Some need boiling for a long time to be killed. 

HOW DO SPORES SURVIVE IN FACTORIES?
Spores can hide on equipment, floors, and dry ingredients. They stick there until the 
temperature and food are right for them to grow. 

WHAT IS THE TEMPERATURE DANGER ZONE?
This is the temperature range where bacteria grow the fastest. It is between 5 °C and 63 °C. 
Food should never sit in this zone for too long. 

HOW DO YOU STOP SPORES FROM GROWING?
You must cool food quickly or keep hot food very hot. You can also use salt, sugar, or acid (like vinegar) to stop them from waking up. 

WHAT IS A "FLAT SOUR" SPOILAGE?

CAN SPORES BE COMPLETELY REMOVED FROM A FACTORY?
