WHY IS PROPER MIXING SPEED CRUCIAL FOR COAGULANTS?

Coagulants need rapid mixing to spread evenly and neutralize particle charges. Too little mixing 
prevents the chemicals from touching the particles. Too much mixing breaks apart the newly formed clumps (floc). 

HOW DO COAGULANTS REMOVE PARTICLES IN WATER?
Small particles in water have negative charges and repel each other. Coagulants have positive charges. 
They neutralize the negative charges so particles can stick together.

WHY DOES COLD WATER MAKE COAGULATION HARDER?
Cold water makes chemical reactions slower. It also makes water dense. This makes it 
harder for the particle clumps (floc) to sink. 

WHAT HAPPENS IF YOU ADD TOO MUCH COAGULANT?
Overdosing leaves excess coagulant in the water. This reverses particle charges. The particles push each 
other apart again and stay suspended. 

WHY IS WATER ALKALINITY IMPORTANT FOR METAL-BASED COAGULANTS?
Alkalinity is the water's ability to resist pH changes. Metal coagulants (like alum) are acidic. Without 
enough alkalinity, the water's pH drops too low. This stops the coagulant from forming solid clumps.

Rennet is a group of enzymes (mainly chymosin) used in cheesemaking. It causes milk to curdle by 
separating it into solid curds and liquid whey. 

WHERE DOES ANIMAL RENNET COME FROM?
Animal rennet is harvested from the fourth stomach (abomasum) of young, milk-fed ruminant animals like calves and lambs.

WHAT IS VEGETARIAN OR MICROBIAL RENNET?
Vegetarian rennet is made from safe microbes (like yeasts or fungi) grown in a lab. It is vegan-friendly and halal. 

CAN I USE TOO MUCH RENNET?
Yes. Too much rennet causes the cheese curds to become overly firm or bitter. 

WHY DID MY RENNET NOT CURDLE THE MILK?
Your milk might be over-pasteurized or ultra-high temperature (UHT) treated, which alters 
the proteins. Alternatively, the rennet may have lost its potency if stored in a warm place.
