WHAT IS FERMENTED MILK PRODUCTS?

Fermented milk products are dairy foods treated with bacterial cultures or yeast. This process turns natural milk 
sugar into lactic acid. This thickens the milk and creates a tart taste. It also extends shelf life and improves digestion. 

HOW ARE FERMENTED MILK PRODUCTS MADE?
Producers start with clean, pasteurized milk. They add a specific starter culture of bacteria. The milk rests in a warm 
space for hours until it thickens and tastes sour. 

WHAT TYPES OF BACTERIA ARE USED IN FERMENTED MILK PRODUCTS?
Common bacteria include Lactobacillus and Streptococcus. These are often called probiotics, 
which means they support good health. 

IS FERMENTED MILK GOOD FOR YOU?
Yes. They are packed with protein, calcium, and vitamins. They also add good bacteria to your gut,

CAN I EAT THEM IF I AM LACTOSE INTOLERANT?

WHAT IS AMASI?
Amasi is a traditional, thick, and sour fermented milk popular in South Africa. It tastes very 
similar to buttermilk or plain yogurt. 

WHAT IS KEFIR?
Kefir is a tart, drinkable fermented milk. It is made using a mix of bacteria and yeasts, 
which gives it a slightly fizzy texture. 

WHAT IS THE DIFFERENCE BETWEEN YOGHURT AND KEFIR?
Yogurt is thick and usually eaten with a spoon. Kefir is thin and meant to be drunk. Kefir also contains a wider variety of good bacteria and yeasts.

DO FERMENTED MILK PRODUCTS CONTAIN ALCOHOL?
Most do not. However, fermented drinks like kefir contain very small trace amounts of natural 
alcohol (usually under 1%) because of the yeasts used. Dynamiko's MTX432 Culture contains no yeast. So no alcohol 
production will occur.

DO THE FERMENTED MILK PRODUCTS GO BAD?
Yes. Even though they are fermented, they can still spoil. Always check the expiration 
date and look for mold or a bad smell.

DO FERMENTED MILK PRODUCTS NEED TO BE REFRIGERATED?
Yes. You must keep them cold in the fridge to stop the bacteria from growing too much. This keeps the 
flavor and texture fresh. Protective culture for example LR4PD can always be added to increase the shelf life. 

HOW LONG DOES FERMENTED MILK PRODUCTS LAST?
They generally last 1 to 2 weeks in the fridge after you open them. Unopened products can last a few 
weeks depending on the packaging. Unless LR4PD culture has been added, then the product will last at 
least a week or two longer.

CAN I USE FERMENTED MILK IN BAKING?
Yes. The acid in fermented milk reacts with baking soda. This helps baked goods like cakes and 
muffins rise and become very soft. 

WHAT IS THE BEST TIME TO CONSUME FERMENTED MILK PRODUCTS?
You can eat them at any time. Many people prefer to drink them in the morning on an empty stomach to help their digestive system wake up. 

DO FERMENTED MILK PRODUCTS HELP WITH WEIGHT LOSS?
Some studies show that high-protein fermented dairy can keep you full for longer. This can help you avoid overeating.

its easier to work with a freeze dried culture MTX432 as there is no draining that needs to take place. 

DOES FERMENTATION REMOVE LACTOSE?
Yes, the bacteria eat and break down most of the lactose in milk. 

WHY DO SOME FERMENTED MILKS CONTAIN ALCOHOL?
Products like kefir use yeasts alongside bacteria, which create trace amounts of alcohol and carbon dioxide. This 
all depends on the culture used.

WHAT IS ACIDOPHILUS MILK?
It is cow's milk fermented with the specific Lactobacillus acidophilus bacterium for added digestive benefits. 

WHAT IS KOUMMISS?
It is a traditional fermented drink made from mare's (horse) milk, popular in Central Asia.

COMMON ISSUES REGARDING FERMENTED MILK PRODUCTS;

WHY IS THERE A SLOW ACID DEVELOPMENT?
Bacteria fail to produce enough acid, extending fermentation time.
Check raw milk for antibiotic residues. Ensure the starter culture is active and used in the correct amount. 

WHAT IS BACTERIOPHAGE CONTAMINATION?
Viruses that attack the starter bacteria, stopping fermentation.
Rotate starter culture strains to prevent virus build-up. Sanitize all equipment thoroughly. 

WHAT IS WHEY SEPARATION (SYNERESIS)?
Liquid whey leaks out of the curd, making the product look unappealing.
Increase the total solids in the milk by adding milk powder. Use stabilizers or lower 
the incubation temperature. 

WHY DOES FERMENTED MILK PRODUCTS HAVE EXCESSIVE SOURNESS?
The final product tastes too acidic.
Cool the product rapidly to 4 °C as soon as the target pH is reached. Do not over-incubate.

WHY IS THERE BITTERNESS OR OFF-FLAVORS?
The product tastes bitter due to the breakdown of milk proteins.
Prevent raw milk from oxidizing. Use starter cultures that are less likely to produce bitter peptides. 

WHY DOES FERMENTED MILK PRODUCTS HAVE LUMPY OR SANDY TEXTURE?
The product is not smooth.
Ensure proper homogenization of the milk before fermentation. Maintain correct 
incubation temperatures without fluctuations.

WHY IS THERE ROPINESS OR SLIMINESS?
The texture becomes sticky or stringy.
Check for contamination by non-starter bacteria in the raw milk. Ensure good hygiene and 
strict pasteurization before adding cultures.

WHY IS THERE MOLD AND YEAST GROWTH?
Spoilage organisms grow on the surface, ruining the product.
Improve packaging hygiene. Store products at consistent refrigeration temperatures below 5 °C. 

WHY IS THERE LOW VIABILITY OF PROBIOTICS?
Health-promoting bacteria die before the product reaches the consumer.
Maintain a cold chain (refrigerated transport and storage) at all times. Add ingredients that 
protect bacteria during shelf life.

WHY IS THERE INCONSISTENT VISCOSITY?
The final product is too runny or too thick.
Standardize the protein and fat content in the milk before starting fermentation. Control the 
time and temperature of the heat treatment process
