RENNET IS PRODUCED FROM YEAST SACCHAROMYCES (KLUYVEROMYCES) LACTIS.
RENNET HAS TRADITIONALLY BEEN USED TO SEPARATE MILK INTO SOLID CURDS AND LIQUID WHEY AND IS USED IN THE PRODUCTION OF CHEESES.
ENSURES SUPERIOR MILK COAGULATION AND CHEESE YIELD, CONSTANT TASTE AND FLAVOUR DEVELOPMENT DURING THE CHEESE RIPENING, AND THE LOWER INFLUENCE OF SEASONALITY ON MILK COMPOSITION CHANGES.
