DIACETYLACTIS, LEUCONOSTOC MESENTEROIDES SPP. CREMORIS AND THE YEAST SACCHAROMYCES SSP. AND KLUIVEROMYCES MARXIANUS. THIS CULTURE ENSURES A UNIFORM AND CONTROLLED PRODUCTION OF FERMENTED MILK LIKE KEFIR.
