CHEESE WAXES ARE SPECIALLY FORMULATED FROM SELECTED FOOD GRADE HYDROCARBON MINERAL WAXES, POLYMERS AND COLOURANTS.
APPLICATION: ALWAYS HANDLE IN CLEAN ENVIRONMENT. THE CHEESE IS DIPPED INTO THE MOLTEN WAX AND ONCE REMOVED, IT SETS RAPIDLY TO GIVE A SMOOTH COATING ON THE OUTSIDE OF THE CHEESE.
COLOURED CHEESE WAXES ARE APPLIED AT TEMPERATURES BETWEEN 80 - 110 ºC, DEPENDING ON THE DESIRED THICKNESS.
CHEESE WAX HAS VARIOUS FUNCTIONS:
PREVENTS MOISTURE LOSS FROM THE CHEESE AND THEREBY STOPS FURTHER LOSS OF MASS OF THE CHEESE.
REDUCES MECHANICAL DAMAGE. PREVENTS MOULD GROWTH AND REDUCES THE PREVENTATIVE MAINTENANCE REQUIRED DURING THE SHELF-LIFE.
