THE MYCELUM GROWTH RESULTS IN A VERY FAST DEVELOPMENT OF VERY SHORT, WHITE AND COLOUR STABLE COATING. KPCV5-S ENHANCES THE RIPENING AND AROMA OF THE CHEESE DUE TO HIGH LIPOLYTIC AND HIGH PROTEOLYTIC ACTIVITY.
HYDRATE CULTURE IN WATER UNDER ASEPTIC CONDITIONS FOR ±30 MIN AND ENSURE IT'S WELL DISPERSED BY GENTLE STIRRING FROM TIME TO TIME. MIGHT EITHER BE USED FOR DIRECT INOCULATION OR FOR SPRAYING / BRUSHING ONTO CHEESE.
