LYOFAST ST CULTURES CONSIST OF SPECIFICALLY SELECTED STRAINS OF FAST-FERMENTING STREPTOCOCCUS THERMOPHILUS. THESE CULTURES ENSURE A UNIFORM AND CONTROLLED PRODUCTION OF FERMENTED MILK, HARD CHEESE & PASTA FILATA CHEESE (LIKE MOZZARELLA, CASCAVAL AND PROVOLONE).
