GCB ENSURES A UNIFORM AND CONTROLLED SURFACE TREATMENT IN THE PRODUCTION OF WHITE MOULDED, SMEARED AND MIXED MOULDED-SMEARED CHEESE. THE GROWTH RESULTS IN A VERY FAST DEVELOPMENT OF A THIN AND HOMOGENEOUS COATING AND, DUE TO AMINOPEPTIDASE ACTIVITY, TO ENHANCED FLAVOUR FORMATION AND REDUCED BITTERNESS.
GCB BREAKS DOWN LACTIC ACID RESULTING IN AN INCREASE OF THE PH ALLOWING THE DEVELOPMENT OF RIPENING MICROBIOTA. THE MOULDS HAS RAPID GROWTH WHICH RESULTS IN DEVELOPMENT INHIBITION OF INDIGENOUS MOULD.
