AGAR (AGAR-AGAR) IS A GELATINOUS SUBSTANCE DERIVED FROM RED SEAWEED (RHODO PHYCEAE). COMPLETELY SOLUBLE IN WATER. USED AS A VEGETARIAN ALTERNATIVE TO GELATIN. IT PRODUCES CLEAR, COLOURLESS, ODOURLESS AND NATURAL GELS WITHOUT THE SUPPORT OR OTHER COLLOIDS. USED AS A STABILISING AND GELLING AGENT. IT IS COMMONLY USED IN VARIOUS CULINARY AND LABORATORY APPLICATIONS DUE TO ITS UNIQUE PROPERTIES. CAN BE USED IN JELLY AND FRUIT BASED DESSERTS. USED AS A THICKENING AGENT IN SOUPS, SAUCES, AND CONFECTIONERY PRODUCTS.
AGAR FORMS A STABLE GEL AT ROOM TEMPERATURE, MAKING IT SUITABLE FOR A VARIETY OF APPLICATIONS. IT HAS A HIGHER MELTING POINT THAN GELATIN, ALLOWING GELS TO BE STABLE AT HIGHER TEMPERATURES.
DOSAGE: 0.1 - 1.5 % (DEPENDING ON DESIRED TEXTURE).
