HOMOFERMENTATIVE MESOPHILIC CHEESE CULTURES (SELECTED TO OBTAIN A WELL-DEFINED ACTIVITY ON A GIVEN ACIDIFICATION TIME), CONTAINING LACTOCOCCUS LACTIS SSP. LACTIS AND LACTOCOCCUS LACTIS SSP. CREMORIS. DOES NOT PRODUCE CO2.


RECOMMENDED DOSAGES PER 100 L:

- SEMI-HARD / FRESH CHEESE = 0.2 - 0.4 D

- SOFT CHEESE / SOUR CREAM = 0.1 - 0.4 D

- HARD CHEESE = 0.3 - 0.5 D

- COTTAGE CHEESE = 0.2 - 2.0
