CHEESE MOULDS ARE USED IN CHEESE PRODUCTION FOR SHAPING, DRAINING AND AIDING THE AGING OF CHEESE, CONTRIBUTING TO ITS FINAL TEXTURE AND FLAVOUR.
RECTANGULAR MOULDS HAVE STRAIGHT SIDES AND A FLAT BOTTOM, WHICH CREATE BLOCKS OF CHEESE. COMMONLY USED FOR CHEDDAR OR GOUDA. MADE FROM FOOD-GRADE PLASTIC OR STAINLESS STEEL, WHICH PROVIDES DURABILITY, EASY CLEANING AND RESISTANCE TO CORROSION. DIMENSIONS VARY DEPENDING ON THE TYPE AND QUANTITY OF CHEESE.
AFTER CURDS ARE FORMED, PLACE INTO MOULD. DEPENDING ON THE TYPE OF CHEESE, VARYING AMOUNTS OF PRESSURE MAY BE APPLIED TO THE MOULD TO ACHIEVE THE DESIRED DENSITY AND MOISTURE CONTENT. AFTER PRESSING, THE CHEESE IS USUALLY REMOVED FROM THE MOULD FOR SALTING AND THEN PLACED IN AN AGING ENVIRONMENT WHERE IT DEVELOPS FLAVOUR AND TEXTURE.
RINSE IMMEDIATELY WITH COLD WATER. IF NECESSARY, SOAK IN WARM SOAPY WATER (15 - 20 MIN) AND WASH WITH CLOTH.
STORE IN DRY, CLEAN, WELL-VENTILATED AREA, AWAY FROM SUNLIGHT. COVER WITH FOOD-SAFE PLASTIC BAGS.
