ST REGINA S0 ENSURES A UNIFORM AND CONTROLLED PRODUCTION OF PASTA FILATA CHEESE (LIKE MOZZARELLA, PIZZA CHEESE, FIORDILATTE, PROVOLA, PROVOLONE, CACIOCAVALLO). ALSO ENSURES AN EXTRA FERMENTATION SPEED TO GIVE A LOW POST ACIDIFICATION AND GUARANTEE STANDARDISATION OF PRODUCTION TIME IMPROVING STRETCHABILITY OF CHEESE. PERFECT THIN SLICES.
