LYOFAST LH 4R 51 CONSISTS OF A SPECIFICALLY SELECTED STRAIN OF LACTOBACILLUS HELVETICUS. THIS CULTURES ENSURES A UNIFORM AND CONTROLLED PRODUCTION OF HARD AND SEMI-HARD CHEESE, WITH ENHANCED FLAVOUR DUE TO HIGH PROTEINASE AND PEPTIDASE ACTIVITY, IN COMBINATION WITH OTHER LAB STARTER CULTURE E.G. STREPTOCOCCUS THERMOPHILUS.
