LYOFAST MW 035 TA IS A FREEZE-DRIED STARTER CULTURE.
THIS STARTER CULTURE CONSISTS OF UNDEFINED STRAINS OF LACTOCOCCUS LACTIS SSP. CREMORIS, LACTOCOCCUS LACTIS SSP. LACTIS, LACTOCOCCUS LACTIS SSP. LACTIS BIOVAR. DIACETYLACTIS AND DEFINED STRAINS OF LEUCONOSTOC PSEUDOMESENTEROIDES.
ENSURES A UNIFORM AND CONTROLLED PRODUCTION OF FERMENTED MILK (LIKE AMASI) AND VARIOUS TYPES OF CHEESES, I.E. FRESH CHEESE, SOFT CHEESE, SEMI-HARD CHEESE. IT HAS A FAST CITRATE FERMENTATION AT 32 ºC.
DOSAGE: ± 0.5 - 5.0 UC PER 100 L MILK (DEPENDING ON END PRODUCT).
RECOMMENDED ROTATION: MW 039 TA.
