LYOFAST MW 039 TA IS A FREEZE-DRIED STARTER CULTURE.
THIS CULTURE CONSISTS OF UNDEFINED STRAINS OF LACTOCOCCUS LACTIS SSP. CREMORIS, LACTOCOCCUS LACTIS SSP. LACTIS, LACTOCOCCUS LACTIS SSP. LACTIS BIOVAR. DIACETYLACTIS AND DEFINED STRAINS OF LACTOCOCCUS LACTIS SSP. LACTIS BIOVAR. DIACETYLACTIS AND LEUCONOSTOC PSEUDOMESENTEROIDES.
IT ENSURE A UNIFORM AND CONTROLLED PRODUCTION OF FERMENTED MILK (LIKE AMASI) AND VARIOUS TYPES OF CHEESES, I.E. FRESH CHEESE, SOFT CHEESE, SEMI-HARD CHEESE. IT HAS A FAST CITRATE FERMENTATION AT 32 ºC.
