PROTECTIVE CULTURE AGAINST YEAST AND MOULD (DAIRY PRODUCTS)
LYOFAST LR B CONSISTS OF A SELECTED STRAIN OF LACTOBACILLUS RHAMNOSUS, THAT MAY BE APPLIED IN FERMENTED MILK AND CHEESE PRODUCTS AS A NON-STARTER CULTURE LACTIC ACID BACTERIA. IT'S A PROTECTIVE CULTURE THAT AFFECTS YEAST AND MOULDS DEVELOPMENT. ADDED TO RAW MILK, IT CAN HELP CONTROLLING THE PSYCHROTROPIC BACTERIA GROWTH WHEN MILK IS STORED AT COLD TEMPERATURES. THE CULTURE DEVELOPS A WEAK ACIDITY AND AROMA FROM SLOW CITRATE FERMENTATION.
APPLICATIONS: SEMI-HARD CHEESE / HARD CHEESE / FRESH CHEESE / SOFT CHEESE / FERMENTED MILK / PRE-RIPENING MILK.
