A CULTURE FOR USE IN THE PRODUCTION OF SOFT AND SEMI-HARD CHEESES
LYOFAST MOT 096 EF CONSISTS OF SPECIFICALLY SELECTED STRAINS OF LACTOCOCCUS LACTIS SSP LACTIS, LACTOCOCCUS LACTIS SSP. CREMORIS, STREPTOCOCCUS THERMOPHILUS, LACTOBACILLUS HELVETICUS, AND LACTOBACILLUS DELBRUECKII SSP. BULGARICUS. THIS CULTURE CAN BE USED TO PRODUCE FETA, CHEDDAR, GOUDA, CAMEMBERT, BRIE, ROQUEFORT, COTTAGE CHEESE, AND CREAM CHEESE. A VERY GOOD ALL-ROUNDER CULTURE THAT CONTAINS A PERFECT COMBINATION OF STRAINS. THE CULTURE ENSURES A UNIFORM AND CONTROLLED PRODUCTION OF SOFT CHEESE, SEMI-HARD CHEESE, AND HARD CHEESE.
RECOMMEDED DOSAGES:
- 10 UC: 1 000 TO 2 000 L MILK
- 25 UC: 2 500 TO 4 000 L MILK
- 50 UC: 5 000 TO 8 000 L MILK

SHELF-LIFE: 18 MONTHS FROM PRODUCTION DATE, IF STORED AS INSTRUCTED.
STORAGE: CULTURES SHOULD BE PREFERABLY STORED AT -18 ˚C OR BELOW IN THE FREEZER, NOT IN THE REFRIGERATOR. AFTER THE SEALED PACKAGE HAS BEEN OPENED, THE REMAINING CULTURE SHOULD BE STORED IN STERILE BOTTLES PACKED IN CLOSED CONTAINERS IN THE FREEZER.
