YOGHURT STABILISER - STARCH BASED
A STARCH-BASED STABILISER, DERIVED FROM STARCHES SUCH AS CORN, POTATO AND TAPIOCA. USED FOR THICKENING AND STABILISING PROPERTIES TO PROMOTE CONSISTENCY, TEXTURE AND STABILITY.
APPLICATION: DRINKING, SET AND SNACK YOGHURT / SAUCES, SOUPS, GRAVIES, DRESSINGS / BAKED GOODS / PROCESSED CHEESE AND SAUCES. PERFORMS BETTER UNDER HEAT & SHEAR CONDITIONS WHICH IS CRUCIAL FOR FROZEN AND REHEATED PRODUCTS.
DOSAGE (ALWAYS RELATED TO VISCOSITY DESIRED IN PRODUCT AND TOTAL SOLIDS OF BASE USED):
- YOGHURT: 2.0-2.5 % (M/M)
- DRINKING YOGHURT: 0.5-1.0 % (M/M)
- STIRRED SNACK: 3.0-3.5 % (M/M)
- DRINKING SNACK: 1.7-2.2 % (M/M)
- SKIM MILK: AROUND 2 %
- FULL CREAM MILK: AROUND 1.7 TO 1.8 %
- SAUCES: START WITH 1 % AND INCREASE
HALAAL AND KOSHER CERTIFIED.
SHELF-LIFE: UP TO 24 MONTHS FROM THE DATE OF PRODUCTION. ONCE OPENED, RESEAL CONTAINERS SECURELY.
STORAGE: COOL (BELOW 25 °C), DRY CONDITIONS, AWAY FROM DIRECT SUNLIGHT.
MUST BE DRY BLENDED WITH OTHER DRY INGREDIENTS BEFORE ADDING TO LIQUID.
