CULTURE FOR PRODUCTION OF FRESH CHEESE, SOFT CHEESE AND CHEDDAR
FREEZE-DRIED CONCENTRATED STARTER CULTURES FOR DIRECT VAT INOCULATION OF MILK AND MILK BASES. MESOPHILIC STARTER CULTURE. CONSISTS OF SPECIFICALLY SELECTIVE STRAINS LACTOCOCCUS LACTIS SSP. LACTIS, STREPTOCOCCUS THERMOPHILUS AND LACTOCOCCUS LACTIS SPP. CREMORIS. MOS 060 A CULTURE RANGE CAN BE USED FOR CHEDDAR, FETA, MILD COTTAGE CHEESE, MILD GOUDA CHEESE, SOFT CHEESE, FRESH CHEESE, CAMEMBERT AND ROQUEFORT.
DOESN'T PRODUCE GAS AND IS SLIGHTLY SLOWER IN FERMENTATION.

- 50 UC: 5 000 TO 10 000 L OF MILK
- 100 UC: 10 000 TO 15 000 L OF MILK

SHELF-LIFE: UP TO 18 MONTHS FROM PRODUCTION DATE.
STORAGE: CULTURES SHOULD BE PREFERABLY STORED AT -18 °C OR BELOW IN THE FREEZER, NOT IN THE REFRIGERATOR. AFTER THE SEALED PACKAGE HAS BEEN OPENED, THE REMAINING CULTURE SHOULD BE STORED IN STERILE BOTTLES PACKED IN CLOSED CONTAINERS IN THE FREEZER.
