LYOFAST MW 036 / 039 R CONSISTS OF UNDEFINED STRAINS OF LACTOCOCCUS LACTIS SSP. LACTIS, LACTOCOCCUS LACTIS SSP. CREMORIS AND SELECTED STRAINS OF LEUCONOSTOC SPP. AND LACTOCOCCUS LACTIS SSP. LACTIS BIOVAR. DIACETYLACTIS. ENSURES A UNIFORM AND CONTROLLED PRODUCTION OF SOUR CREAMS (LIKE SMETANA) AND FERMENTED MILK. THE CULTURES CAN ALSO BE USED IN THE PRODUCTION OF FRESH CHEESE, SOFT CHEESE, SEMI-HARD CHEESE AND QUARK CHEESE.
MW 036 R HAS FAST CITRATE FERMENTATION.
DOSAGES FOR MW 036 / 039 R:
- FRESH CHEESE AND FERMENTED MILK: 0.5 - 2 UC PER 100 L
- SEMI-HARD CHEESE AND SOUR CREAM / CREME FRAICHE: 1 - 4 UC PER 100 L
- SOFT CHEESE: 0.7 - 2 UC PER 100 L
GMO FREE. HALAAL AND KOSHER CERTIFIED.
SHELF-LIFE: ±18 MONTHS FROM DATE OF PRODUCTION.
STORAGE: PREFERABLY AT -17 °C IN THE FREEZER (NOT REFRIGERATOR). REMAINING CULTURE SHOULD BE STORED IN STERILE BOTTLES, IN CLOSED CONTAINERS IN THE FREEZER.
