OFF-WHITE FINE GRANULES. THE DMG CONTAINS A MIN. OF 95 % MONOGLYCERIDES.
MPROVES BREAD STRUCTURE, ENHANCES AERATION ABILITY, AND PROMOTES EMULSIFICATION. USED IN PASTA PRODUCTS, WHIPPING CREAMS, BREAD, COFFEE WHITENERS, POTATO PRODUCTS, PEANUT BUTTER, AND MARGARINE.
TYPICAL DOSAGE IS 0.3-0.5 %.
IMPORTANT THAT THE EMULSIFIER IS PROPERLY DISPERSED THROUGHOUT THE PEANUTS. MIX EMULSIFIER WITH SUGAR ADDITION, THEN ADD TO THE PEANUTS IN A GRINDER. SOME CUSTOMERS DISSOLVE THE EMULSIFIER IN A SMALL AMOUNT OF VEGETABLE OIL AND MELT IT BEFORE ADDING IT TO THE PEANUTS - ASSISTS WITH DISPERSING. FILLED JARS OF PEANUT BUTTER MUST BE LEFT COMPLETELY UNDISTURBED FOR 72 HOURS. THIS IS THE CRYSTALLIZATION STEP - WILL ALLOW FOR LONGER SHELF-LIFE AND ALLOWS FOR EMULSIFIER TO BIND THE OIL.
